Recipe: Psari Plaki, Fish in the flat and open

 

1½ pounds of Red Snapper fillet, cut into 4 portions

1 onion, cut in a half and thinly sliced

1 celery rib, diced

1 red pepper, diced

1 carrot, cubed and diced

1 potato, cubed and diced

2-3 garlic cloves, roughly chopped

2 tomatoes, peeled and seeded and roughly chopped

1 tsp sugar

½ cup lemon juice

¼ cup chopped dill

¼ cup chopped parsley

 

Preheat oven to 325 degrees. Place fish fillets on an oiled baking sheet and season with salt and pepper.

In a 10-inch skillet, add ½ cup of extra virgin olive oil and sauté the onions just until golden and soft. Add the remaining vegetables and continue to cook for 5 minutes on medium heat.

Add the garlic and tomatoes to the hot pan and ½ cup of water and continue to cook for 2 minutes. Add the sugar and salt and pepper to taste and lower the heat to low and cook 10 minutes.

Carefully spoon the vegetable mixture over the fish and place in the preheated oven. Bake for 15 minutes.

Remove the fish and sprinkle the platter with the lemon juice, parsley, and dill. Let sit for 10 minutes and serve.
